For Tai: a list of important, game-easing addons.
Auctioneer - Easier AH usage and lists prices for items without having to check a vendor
EquipCompare - Lets you compare an item to what you have on by just mousing over it
MapNotes - Invaluable for noting specific locations
QuuSpellAlert - Displays a message when an enemy targeting you is casting a spell. Useful especially for silence and counterspell.
SCT (Scrolling combat text) - Notice how enemies will have the damage and whatnot float above their head? This will do the same for you so you can keep your attention on the center of the screen.
Telo's SelfCast - Auto-self cast when not targeting someone else.
Titan Panel - A load of information in a clean bar at the top of your screen.

I shall do so in a wee bit. I have custom layouts for each character.

My UI? It took a lot of customization, but I can if you want.

Note, that is reduced, but you can see the general layout. Most characters look somewhat like this.
Do you get those top ones (Auctioneer, EquipCompare, etc) from the curse-gaming site? Now that the patch is in, I figure I can finally install an interface.

I got tired of having a broken UI after every patch so I went back to the provided UI and then would add Auctioneer, gatherer, Titan Panel, and self cast as they got updated. But before I ran much the same thing as Pogo et. al. ran.

last patch didn't even mess with the addons.
Where did you get Titan Panel? I've been trying to find it, but keep getting listings of what I think are Titan plugins, and not the Titan Panel itself.
